Take RE2, for instance. It had both ambient, eerie "background" tracks that I enjoyed, as well as bombastic orchestral tracks with nice symphonic arrangements. It also had tracks that melded both styles, like Ada's Theme, Secure Place, and Prologue (To Know the True End), all of which are fantastic.
The same can be said for Code Veronica's soundtrack. The music in Remake fit the atmosphere of the game, but on its own was extremely boring to listen to. To me, these are both very important attributes.
RE5 went a bit overboard with the orchestrations, but it fit the Hollywood blockbuster vibe of the game. RE4 was more ambient and eerie, which also fit the game.
Revelations had a nice soundtrack. Nothing extraordinary, but it fit the game. The track where Chris and Jessica are approaching the Zenobia on the little boat is my favorite. It can also be heard at the start of the Ghost Ship stage. The final boss's theme is also very memorable.
